Parce qu'il ne peut pas se payer une école de cuisine, Loren Collins apprend le métier comme chef dans les cuisines de la marine américaine. Il perd son sang-froid face a un officier mal embouché et finit par lui écraser son poing sur le visage. Adieu la Navy. Il échoue a Dijon avec une vague promesse d'embauche dans un des quatre-étoiles les plus prestigieux, celui de Louis Boyer, qui terrorise tout le monde par ses sautes d'humeur. Apprentissage cruel pour ce bleu tout de suite surnommé Nouillorque et rien ne lui est épargné. Mais Loren aime la perfection.
